DEB'S CORNER


I grew garlic in my garden this year. I took a bulb, broke it into pieces and planted. Now it's growing! Did you know that the flower/seed stalks that shoot up are edible? Most people cut them so the bulbs will grow bigger and better. DON'T THROW THEM AWAY! They are actually called garlic scapes and are delicious! You can brush them with olive oil and grill them like asparagus. You can chop them up and add them to salads and stir fry. Or you can make pesto. It will keep in the fridge for a couple of weeks, or you can freeze it to use in the winter. Use it on brushetta, pasta, eggs, focaccia, and anything you grill. Mix it with mayonnaise and put it on a roast beef sandwich.

Garlic scape pesto


1 pound garlic scapes
1 cup grated parmesan cheese
Olive oil (about 1/2 to 1 cup)
Pine nuts if available

Chop the garlic scapes into 3 inch lengths. Put it in the food processor and process until pureed. Add the parmesan and pine nuts and process until smooth. Slowly add the olive oil as the food processor runs and continue until all the oil is combined into the garlic. Store in an air-tight jar in the refrigerator.
